Notes: Vibrant purple, ripe with jammy cassis notes. Upfront
tannin structure balanced well with tart berry fruits, yet retains
a rich juicy finish. (Sarah’s favourite it’s her “spag
bol wine”)

Vinification: Total de-stemming of the
grape harvest ; Fermentation in concrete vats, maintaining the
temperature to around 26° /
28° by ventilating the must regularly. Fifteen days average
fermentation on the skins, vertical pneumatic pressing, free run
wine and press wine are treated separately. Malolactic fermentation
is left to take place naturally in the spring. Limited dosage of
SO2.
