Tasting
Notes: Rich in flavour supple in texture, significant yet
firm young tannins; complex fruit, spicy black cherry. The merlot
brings colour and suppleness while the cabernet franc gives the
fruit & oaky aroma, long distinctive finish.

Vinification: Total de-stemming
of the grape harvest ; Fermentation in concrete vats, maintaining
the
temperature to around 26°/28° by ventilating the must
regularly. Fifteen days average fermentation on the skins, vertical
pneumatic pressing, free run
wine and press wine are treated separately. Malolactic fermentation
is left to take place naturally in the spring. Limited dosage of
SO2.
